COVAP’s farms are spread out across the dehesas of the Valle de Los Pedroches, Valle del Guadiato, Serena and Siberia regions, Valle de la Alcudia, and Sierra de Huelva.

The Alta Expresión de Los Pedroches brand comes under the Los Pedroches Protected Designation of Origin and therefore all cuts come from 100% Ibérico pigs raised roaming free in the dehesas of the Valle de Los Pedroches, to the north of Córdoba province, under the quality standards set out in the PDO regulations, and are the best cuts from our natural curing rooms. And the Alta Expresión brand offers cuts selected by our Master Ham Carvers, from 100% Ibérico pigs raised roaming free in the dehesas of Ciudad Real, Córdoba, Badajoz, and Huelva.

We hold the AENOR Animal Welfare certificate based on the European Welfare Quality benchmark following an assessment of good practices in livestock farming at 305 of COVAP's dairy farms and 576 of its 100% Ibérico pig farms.
