Ibéricos COVAP presents the 2019 Luxury Collection in a special limited edition for christmas
The Valle de los Pedroches livestock cooperative (COVAP) is a firm with 60 years' history behind it. COVAP was first set up in Pozoblanco (Córdoba), by a group of farmers with a shared goal: to preserve the special ecosystem of the Córdoba dehesa (oak grove) and contribute towards the economic and social development of the area by producing and marketing a product whose quality is guaranteed at source. Thanks to the cooperative's traceability project, the only one of its kind in the market, the background of very single piece can be tracked individually, all made from 100% Ibérico-breed pigs with a genealogical pedigree, raised roaming free and fed at the feet of the ancient holm-oaks of the Pedroches pastureland, an area that's more than 300,000 hectares in size.
All the cooperative farmer's hard work and experience, handed down from generation to generation, and their long-term commitment to best farming practices, has enabled COVAP Iberícos to earn the AENOR Animal Welfare certificate, accrediting compliance with the requirements of the welfare protocol for COVAP's 100% Ibérico-breed pigs
For this coming Christmas season COVAP is launching its 2019 AX Luxury Collection, the finest selection of 100% Ibérico acorn-fed products, with five exclusive packs of products made from 100% Ibérico-breed pigs.
This limited edition features a total of 300 unique, exclusive pieces specially selected by the cooperative's master pork ham-makers, with more than 46 months of slow curing, and backed by the official Pedroches Designation of Origin. All the pieces have an unbroken seal and a certificate of traceability from the source, so customers can obtain all the information on their pieces, including the name of the farm where the 100% Ibérico pig was raised, how many days it spent enjoying being able to roam free during the montanera stage, and details of its curing process in our natural curing sheds.
PACK AX LUXURY ACORN-FED 100% IBÉRICO PORK HAM ALTA EXPRESIÓN DE LOS PEDROCHES FROM 2015
The special treat of this selection, this “AX” lot includes an exclusive Ibéricos COVAP acorn-fed 100% ibérico pork ham Alta Expresión de los Pedroches, bearing the Pedroches designation of origin, from 2015, with a weight ranging between 7 and 7.5 kg. Chosen by the COVAP's master pork ham-makers, the pork ham has been cured slowly for more than 46 months in natural curing sheds, following traditional artisanal techniques. The pack is completed with a personalised black and gold sleeve, a professional, top-quality steel pork ham-carving knife, made in Spain, with a leather case, a 100% cotton apron embroidered with gold silk, and a gift box with an exclusive design. Each pork ham comes with a video card, containing a video tutorial on the right way to carve ham.

Lovers of Ibérico sausages can now choose from various different lots. For example, one contains a Ibéricos COVAP Acorn-fed 100% Pork loin Alta Expresión (approx. 500 g.), an acorn-fed Ibérico caña de presa with sweet paprika (approx. 350 g) and acorn-fed Ibérico caña de presa Alta Expresión without sweet paprika (approx. 350 g), all individually packed.
